It is thus possible to achieve an untreated starch with a high degree of purity – physically, chemically as well as microbiologically. When added to baked goods, potato starch acts as a binding agent, giving the baked goods a moist and chewy texture. Potato starch is often used as a substitute for corn starch for making many baked goods. Potato starch is gluten-free and can be used as a thickener to thicken sauces, soups, and pie.
