To be called Cold Pressed, the oil cannot be exposed to temperatures any higher than in their natural environment in the vineyard. Our oil is nutritiously dense because we use our own technology that mechanically cold presses the oil, which we then physically refine with simple natural clay and steam resulting in our delicious and golden green colored oil that Salute Santé! is known for.
