Description
Organic balsamic vinegar from Lambrusco and Trebbiano grapes, the two traditional varieties of Modena. Cooked slowly to a sweet must, then aged. The result is dark, viscous, and slightly thick. The kind of vinegar that pours rather than drips.
It tastes of slow-baked stone fruit, dried fig, and the wooden barrels it has been quiet in.
Ways to enjoy
- Finishing a wedge of aged Parmigiano-Reggiano with the back of a spoon.
- Dressed onto warm strawberries with cracked pepper, in the half hour before they melt.
- A few drops on a grilled steak, fish, or roasted carrots, off the heat.
Belongs with oils & vinegars, antipasti, and the cupboard that takes its condiments seriously.
