Most commonly used in canning, Citrus Acid is a natural preservative and you will find that it is often referred to as sour salt in recipes calling for some tartness characteristics. Found in a variety of vegetables and fruits, especially citrusy fruits like lemons, limes and pineapples as these have the highest concentrations of the acid.
