It creates a flat cooking surface that balances smaller pots (such as butter warmers and espresso makers) and helps keep pan handles from getting hot. You will find it useful for simmering sauces and other foods slowly without scorching or boiling over. The cast iron absorbs and diffuses heat evenly for better energy efficiency. The long handle keeps hands safely away from heat but may be removed for storage. Not recommended for glass cooktops as it could cause scratches.
