Description
A couche is a linen cloth used for proofing dough of various sizes and shapes, especially baguettes. This 24” x 36” couche is made of professional grade flax linen which is untreated and unbleached. All four edges have a finished seam to prevent fraying. Placing your baguettes between couche folds will help to shape the dough and prevent them from proofing into each other. It also wicks away a little of the dough’s outer moisture to help develop a skin and therefore a crisp crust. Dust the couche with flour to prevent dough from sticking. Never wash a baker’s couche, but rather shake or brush off excess flour and air dry. If any dough sticks, allow it to dry and then scrape off. Made in France.
