Lemon & Garlic Chickpeas Antipasti

Chickpeas, or Ceci in Italian, are a staple in Mediterranean cuisine. Simple, yet flavorful, they can be used in many ways.

We marinated our chickpeas in extra virgin olive oil, fresh chopped garlic and a squeeze of fresh lemon juice for a light but flavorful condiment. Serve right out of the jar as part of an Antipasti appetizer selection , toss into salads, serve with roasted chicken as a side dish or puree into a spreadable dip or sandwich spread. Buon Appetito!
